Disodium phosphate or equivalent 0.10

Preparation

  1. Heat water to 60°C.
  2. Melt palm oil and maintain at 60°C until use.
  3. Blend 1 part of Ticaloid® BD-1811 stabiliser system with 4 parts of sugar.
  4. Add the above dry blend into 60°C water and mix at 200rpm. Mix for at least 15 minutes or until fully dispersed.
  5. Add disodium phosphate into above solution and mix at 200rpm. Mix for at least 5 minutes or until fully dissolved.
  6. Add skim milk powder and sweet whey powder into above solution and mix at 200rpm. Mix for at least 40 minutes or until fully dispersed.
  7. Add remaining sugar and NATIONAL M1 maltodextrin into above solution and mix at 3000rpm. Mix for at least 15 minutes or until fully dissolved.
  8. Add the melted palm oil into above solution and mix at 6000rpm. Mix for at least 15 minutes.
  9. Preheat at 60°C.
  10. Homogenise at 120 bar (100/20).
  11. Pasteurise at 85°C for 1 minute.
  12. Cool to 30°C with mixing at 300rpm.
  13. Add lactose seed with mixing at 300 rpm. Continue cooling until product reaches 25°C.
  14. Cover the product and leave overnight in ambient conditions.
  15. Remove foam from surface of product.
  16. Fill product into sterilised jars and seal.
  17. Store finished product in ambient conditions.
