          Preparation
1. In small batch tank, mix cocoa powder andportion of water and heat to 100°C.
          2. Dry blend gum and granulated sugar
          3. Add gum/sugar blend to main batch tankwater and mix 10 minutes under high agitation.
          4. Add the MPC and mix for 30 minutes under high agitation.
