NOVATION® Lumina 0100 functional native starch

NOVATION® Lumina 0100 functional native starch is designed to withstand intense processing conditions while supporting the clean label your consumers increasingly seek and expect.

In UHT dairy applications, such as puddings, yoghurts and desserts, it can deliver excellent tolerance while imparting a creamy, rich mouthfeel and short texture. In fruit fillings, NOVATION® Lumina 0100 can provide excellent sheen and clarity even following long-term heating, storage and freeze/thaw cycles.

For soups and white sauces, its pale colour can impart an extra brightness to your products and in dressings, NOVATION® Lumina 0100 can enable you to build smooth, short, stable textures with excellent stability.

Offering the shelf life and freeze-thaw stability process tolerance of highly cross-linked modified starches, NOVATION® Lumina 0100 can withstand high-temperature processing through scraped-surface, tubular and plate heat exchangers, direct steam injection, homogenisation, colloid milling and vacuum cooling.
