Preparation
1. Mix the minced beef with the salt and sodium erythorbate in a bowl chopper for one minute.
2. Add the starch, seasoning, potassium lactate, sodium di-acetate and water and mix for one minute.
3. Emulsify in bowl chopper for one minute, maintaining a cold batter temperature.
4. Stuff into 23-25 mm cellulose casing. 5. Cook to 72°C core.
5. Store in a refrigerator.
