Preparation
1. Grind the meat and chicken skin separately, then mix together.
2. Mix the cold water, starch and seasoning together and place in a blender, along with the meat.
3. Mix until the ingredients are evenly dispersed throughout the meat.
4. Form the mixture into patties using a patty former.
5. Cook at 200°C / 90% relative humidity (steam) for 12 to 15 minutes, or as required to reach minimum 76°C core temperature.
6. Freeze and pack the cooked meat patties.
