Preparation

1. Blend the dry ingredients, except the ULTRA-TEX® 2131.
2. Blend the water, vinegar, lemon juice and mustard (water phase) with a kitchen aid.
3. Mix the oil with the ULTRA-TEX® 2131 (oil phase).
4. Add the oil phase to the water phase under high shear until an emulsion is created and the sauce is at the desired consistency.
5. Fill into containers and store in a refrigerator.
