Preparation
1. Blend all of the dry ingredients, except HOMECRAFT CREATE® 365.
2. Mix HOMECRAFT CREATE® 365 and water.
3. Pour the flour and water mixture, the vinegar and mustard into a kitchen aid with a heating unit.
4. Add the dry ingredients and mix at low speed for one minute.
5. Heat to 90°C and hold for eight minutes at low speed.
6. Cool down to 60°C, add egg yolk and emulsify for 30 seconds at low speed.
7. Cool down to 20°C and add oil within 60 seconds at low speed.
8. Once all oil is added, emulsify for 30 seconds at the same speed.
9. Cold fill into containers and keep refrigerated.
