Preparation
1. Peel and dice the pumpkin into small chunks.
2. Roast the pumpkin at 180°C for 30 to 45 minutes, until soft.
3. Pre-blend starches and mix in 1/3 of the water.
4. Sweat the onions and garlic puree with the oil.
5. Add the herbs and stir for one minute before adding the roasted pumpkin.
6. Add the water, cream and vegetable stock.
7. Bring to a boil and puree the mix. Blend it until smooth and homogenous.
8. Add the starch and water mixture and cook for 15 minutes until the desired texture is achieved.
9. Serve, or transfer to containers and keep refrigerated.
