Preparation

1. Blanch the fresh spinach in boiling water.
2. Squeeze out as much water as possible from the spinach and the ricotta.
3. Mix the ricotta with the spinach.
4. Grate the cheese trimmings and add them to the ricotta and spinach mix.
5. Add salt, pepper, nutmeg, starch and mix well.
6. Fill into pasta dough and shape.
