Preparation
1. Mix the water and mustard with all powders (except ULTRA-TEX® 2131 and spices) in a toothed colloid mill for one and a half minutes at 2000 rpm under vacuum.
2. Mix the ULTRA-TEX® 2131 with three parts of the oil and keep the remaining oil separate.
3. Slowly add the oil to the water phase while mixing at 4000 rpm.
4. Reduce the speed to 2000 rpm and add the mix of ULTRA-TEX® 2131 and oil. Mix for one and a half minutes.
5. Add the vinegar and mix for 30 seconds.
6. Mix all of the spices toge/content/dam/ingredion/2021/images/emea-savoury/nutritionals/tunisianvegandressing.jpgther and then mix with the water, lemon juice and tomato paste until homogeneous.
7. Add the spice mix to the dressing at a level of 20% and mix slowly until homogeneous.
