Explore Food Tech Summit 2026 trends in texture, sweetness and sustainability shaping food innovation trends across Latin America.

At a glance

Every year, Food Tech Summit & Expo brings together food and beverage innovators from across Latin America to explore the trends, technologies and consumer expectations shaping the future of food. This year’s event highlighted a clear challenge brands are facing: consumers continue to demand better taste, texture, nutrition and sustainability, while the business must balance rising costs, operational realities and growth objectives.

At Food Tech Summit 2026, Ingredion showcased how these priorities can work together through ingredient solutions, consumer insights and application concepts designed to help manufacturers innovate with confidence. Across booth demonstrations, sensory experiences and educational presentations, one message emerged consistently. The future belongs to products that successfully balance sensory appeal, wellness, affordability and sustainability.

Why sensory experiences are becoming a competitive advantage

Consumers may not always describe texture in technical terms, but they instinctively recognize when a product delivers a satisfying experience. That reality was the focus of Ingredion’s conference session, The Power of Texture and Sensory Experience: Connecting with Every Generation, which explored how texture influences consumer choice, product preference and long-term loyalty across demographics.

The presentation reinforced a growing industry understanding that sensory experiences are no longer secondary product attributes; they are often the difference between a product that is tried once and one that becomes a repeat purchase.

This perspective was reflected throughout Ingredion’s featured concepts. The Naan-Tastic Crisps demonstrated how carefully engineered crunch can elevate a baked, reduced-fat snack, while the NYC Style Cookie showcased how contrasting textures can create a more indulgent experience even in products developed without added sugars. Across categories, texture served as both a consumer benefit and a strategic tool for product differentiation.

The evolution of sweetness expectations

For years, sugar reduction efforts focused primarily on reducing calories and improving nutritional profiles. Today, however, consumer expectations have evolved. People want products with less sugar, but they still expect the eating and drinking experience to remain enjoyable.

Ingredion’s Sweet Shift: The Change in the Sweetness Experience presentation explored how Mexican consumers perceive sweetness and how those preferences are changing. Using sensory research and market insights, the session highlighted opportunities for brands to develop products that align with modern sweetness expectations while maintaining consumer satisfaction.

Several featured concepts illustrated this trend in practice. The Citrus Cantarito combined stevia and allulose solutions to create a naturally sweetened beverage with a clean sweetness profile and reduced calories. Meanwhile, the NYC Style Cookie demonstrated how sweetness optimization and texture design can work together to deliver indulgence without relying on traditional sugar levels.

These concepts highlighted an important shift in product development. Success is no longer measured solely by how much sugar can be removed. It is measured by how effectively manufacturers preserve the overall sensory experience consumers expect.

Innovation must create value across the entire system

Another major theme throughout Food Tech Summit was the growing need for solutions that create value beyond the finished product itself. Manufacturers increasingly seek innovations that support consumer appeal while helping address cost pressures, resource efficiency and operational challenges.

Ingredion’s booth concepts reflected this broader view of innovation. The Nextgen Cocoa concept explored opportunities to reduce cocoa usage while maintaining the appearance, flavor and sensory performance consumers expect from chocolate products. Designed to maximize cocoa utilization, the concept demonstrated how brand leaders can create value while navigating commodity pressures.

Similarly, the UpCream concept leveraged whey as a process ingredient to create a creamy cheese-style dip while showcasing a different approach to sustainability and resource utilization. The result was a solution that balanced functionality, sensory appeal and product innovation.

These examples reinforce the idea that successful innovation requires manufacturers to consider product performance, process efficiency and business outcomes simultaneously.

Ingredion’s main booth featured six application concepts designed to address some of the industry’s most pressing opportunities and challenges. Each concept highlighted our expertise in texture, sugar reduction, affordability and sustainability.

Naan-tastic Crisp demonstrated how ingredient innovation can deliver a light, consistent crunch while supporting the healthier positioning consumers increasingly seek from snacks.

Golden Ham Toast showcased the importance of texture in savory applications, pairing a firm meat bite with a creamy, glossy hollandaise-style sauce to create a balanced sensory experience.

Citrus Cantarito highlighted opportunities in reduced-sugar beverages, combining natural sweetness solutions with a clean-tasting citrus profile.

UpCream demonstrated how functionality and sustainability can work together through the use of whey-based formulation strategies.

NYC Style Cookie showcased how manufacturers can create indulgent bakery experiences with no added sugars by combining sweetness optimization and multitextural design.

Nextgen Cocoa illustrated the growing importance of affordability and resource optimization while maintaining the sensory attributes consumers expect from chocolate-flavored applications.

Taken together, the concepts served as practical examples of how manufacturers can respond to evolving consumer demands while addressing real-world business challenges.

Bringing texture and taste to life through culinary innovation

Beyond the main exhibit, select customers participated in Ingredion’s Texture & Taste Experience developed by our CULINOLOGY® team. Designed as an immersive sensory journey, the experience blended culinary creativity with food science to demonstrate how ingredient innovation can translate into memorable consumer experiences.

The menu drew inspiration from both global culinary influences and local consumer preferences. Featured applications included a fizzy mango and pitahaya dairy mocktail, a spicy peanut hummus paired with crunchy sesame tostadas, a texture-rich pumpkin dessert and mochi filled with lemon marshmallow and blueberry jelly. Each concept highlighted a different aspect of texture, sweetness or sensory engagement.

The experience reinforced a simple but powerful lesson: consumers do not experience ingredients individually. They experience products through flavor, texture, aroma, appearance and enjoyment. Successful innovation requires bringing all of those elements together in ways that feel seamless and rewarding.

Looking ahead: Creating products consumers choose again and again

Food Tech Summit 2026 reinforced that the future of food innovation will require a more integrated approach to product development. Consumers continue to prioritize health, sensory experiences and sustainability, but they are unwilling to compromise on taste and enjoyment. At the same time, manufacturers must navigate increasingly complex formulation challenges while maintaining competitiveness and profitability.

The products that succeed will be those that connect these priorities rather than treating them as separate objectives. They will combine desirable sensory experiences, thoughtful ingredient choices and practical business value.

At Ingredion, we believe the strongest innovations are built where texture, sweetness and value converge. By combining consumer insights, technical expertise and ingredient solutions, we can help you create products that delight consumers, differentiate your brand and help address the challenges shaping the future of food.
