Preparation

1. Preheat a convection oven at 170ºC.
2. Cream butterfat and sugar, honey and flavour using the paddle attachment of a planetary mixer at speed 1 for 1 minute.
3. Add 1/3 of eggs and mix at the lowest speed for 1 minute.
4. Add in pre-blended dry ingredients, lemon juice and the rest of eggs and mix just until incorporated.
5. Sheet the cookie dough to 5 mm, cut cookies and place on a tray with baking paper.
6. Bake for 6-8 minutes at 160°C on a medium fan speed.
7. Remove cookies from the cookie sheet and cool on a rack.

Guidelines

All ingredients should have an ambient temperature around 20°C.
