Procedure:

  1. Mix water, lemon juice, ASTRAEA® Allulose, and Dijon mustard and whisk
  2. In a separate bowl, blend dry ingredients including ULTRA-TEX® 1311
  3. Whisk in dry blend into container to make a paste
  4. Slowly pour in oil while whisking to form an emulsion
  5. Shear with a high shear mixer for 2 minutes at 25 Hz
