Preparation
1. Place water in a suitable container and agitate using overhead mixer to form a vortex.
2. Dissolve the required amount of sodium benzoate in water.
3. Dissolve orange-pineapple concentrate and citric acid under constant agitation.
4. Pre-blend PURECIRCLE™ by Ingredion Reb M stevia leaf sweetener, vitamin/mineral blend, and caffeine continuing to agitate until they are completely dissolved/dispersed (5-10 minutes).
5. Slowly add flavor under constant shear for 5 minutes.
6. Pasteurize the base at 210°F for 30 seconds. Fill at 185°F.
7. Store under refrigeration prior to carbonation.
8. Carbonate the beverage.
Guidelines
1. It’s important to note that the first ingredient added to water is sodium benzoate. If sodium benzoate is added after acids it will form a thick, white, gelatinous precipitate that creates a milky-white cloud in the beverage. Using warm water will aid dissolution of preservative.
2. It is very critical to refrigerate the product prior to carbonation to obtain an optimum carbonation volume.
