Preparation

1. In small batch tank mix cocoa powder and portion of water and heat to 100°C
2. Dry blend gum and granulated sugar
3. Add gum/sugar blend to main batch tank water and mix 10 minutes under high agitation
4. Add the MPC and mix for 30 minutes under high agitation
5. Add the disodium phosphate, sodium citrate, and sodium chloride and mix for 5 minutes
6. Add cocoa powder solution and vanilla extract and mix for 5 minutes
7. Process UHT (Direct Steam 140°C for 4 seconds)
8. Homogenize downstream at 200 Bar (170/30) Total
9. Cool and collect aseptically
