Preparation
1. Blend dry ingredients.
2. Add dry ingredients to skim milk and cream in Likwifier and blend at 500 rpm for 30 minutes.
3. Process through HTST system. Pre-heat to 140°F. Homogenize at 1700 psi for first stage and 400 psi for second stage. Pasteurize at 208°F and hold for 30 seconds.
4. Chill to serve.
