Preparation

  1. Dissolve TICorganic® Arabic Spray Dry Powder with moderate agitation in water containing preservatives until fully hydrated (1-2 hours) at room temperature.
  2. Separately, dissolve ester gum 8BG in 1x fold orange oil (heating oil to 50°C/120°F helps speed up dissolution of the ester gum).
  3. Dissolve citric acid in the above gum solution until desired pH is achieved (step 1).
  4. Allow time for foam in gum solution to separate (5-10 minutes).
  5. Make pre-emulsion by adding oil phase into gum solution under high shear mixing.
  6. Homogenise the above pre-emulsion using pressure homogeniser; 2 passes at 3500/500 psi.

Guidelines

  1. Avoid temperatures above 65°C/150°F during the preparation of the emulsion.
  2. Avoid presence of undissolved gum or air bubbles during homogenisation.
  3. Heating oil to 50°C/120°F helps speed up dissolution of the ester gum.
  4. To reduce foam generation during gum hydration, reduce mixing speed.
  5. An additional 1-2% gum acacia can give some extra stability to the emulsion if required.
