Preparation

  1. Blend 1 part of TIC Pretested® pectin AM 800 with 5 parts of sugar.
  2. Heat water to 90⁰C. Add the dry blend of pectin and sugar into 90⁰C water and mix at 5000rpm. Mix for at least 10 minutes or until fully dispersed. Do not add in HOMECRAFT® Create 335 flour at this stage.
  3. Cool the above mixture to 25⁰C.
  4. Add HOMECRAFT® Create 335 flour and mix at 1500rpm for 5 minutes.
  5. Add yoghurt white mass and remaining sugar into the above mixture and mix at 200rpm for 15 minutes.
  6. Dilute citric acid into 10% solution and add into above mixture while stirring at 200rpm until pH reaches 4.
  7. Add strawberry flavour and mix at 200rpm for 1 minute.
  8. Preheat to 75⁰C.
  9. Homogenise at 240 bar (200/40).
  10. Fill product into clean bottles.
  11. Pasteurise at 90⁰C for 30 minutes.
  12. Cool down product to ambient temperature.
  13. Store finished product at ambient temperature.
