Preparation

Pulse extruded crisp

  1. Dry blend all ingredients.
  2. Process well blended dries using twin-screw extruder with 6 barrels and 32 mm screw diameter using the following parameters:

  1. Preheat oven to 310°F.
  2. Premix dry ingredients except extruded faba bean protein crisps, mini chocolate chips and dried cherries.
  3. Dissolve the honey in water.
  4. Add water/honey mixture to the dry ingredients while mixing on low speed using a Kitchen Aid just until incorporated.
  5. Add the following ingredients separately, mixing on low speed just until incorporated after each addition: oil, faba bean crisps, chocolate chips, dried cherries.
  6. Use 1oz scoop to drop cookie dough and flatten dough to form cookie.
  7. Bake for 13-15 mins or until golden brown.
  8. Bake at 400˚F for 20 minutes.
  9. Immediately remove from pans, and cool on rack for 1 hour before packaging.
