Sunblushed tomato relish

Sunblushed tomatoes 50.00
Water 25.00
Tomato paste, double concentrated 14.00
Fine chopped tomatoes, canned 9.40
Salt 0.45
Garlic purée 0.38
Cracked black pepper 0.02


  1. Pour the water into a kitchen aid.
  2. Disperse the dry ingredients in the water.
  3. Blend for four minutes at a low speed until the mixture forms into a gel.
  4. Add the garlic, tomato paste and chopped tomatoes to the kitchen aid and blend for 30 seconds at a low speed.
  5. Using a high-speed mixer, blend the sunblushed tomatoes with equal amounts of base sauce for 30 seconds until a chunky texture is achieved.
  6. Cold fill into containers and keep refrigerated.
