ULTRA-TEX® 2131 starch is a highly shear resistant instant starch, suitable also for low pH. With good baking and shelf-life stability, ULTRA-TEX® 2131 starch withstands higher shear during production versus other starches leading to the improvement of emulsion quality.
ULTRA-TEX® 2131 starch enables low cost formulations with excellent mouthfeel in comparison to other instant starches. In addition to this, it contributes to the end product’s visual appeal, creating a premium glossy texture in a range of applications such as salad dressings and mayonnaise.
